Cap of Liberty is a once popular vintage quality cider variety, believed to have originated from Martock in Somerset, first listed in 1873. It makes an excellent, rich, acidic cider with a clean fruity taste. Highly recommended as a vintage variety, but experience is required to get the best out of it.
